On its first look, your guests will think this is just an ordinary birthday cake, until the candles have been blown out and the first slice has been cut, revealing the chewy, dense cookie on the bottom and fluffy confetti cake on top.

Required ingredients for Cookie Layer

  • 6 tbsp of unsalted butter and more for buttering the pan
  • 1 cup All-Purpose Flour (Maida)
  • ½ tsp of Baking Soda
  • ½ tsp of Fine Salt
  • ½ cup of powdered Sugar
  • 1/3 cup packed light brown Sugar
  • 1 large egg
  • ½ tsp of pure Vanilla Extract
  • 1/3 cups mini semisweet chocolate chips

Required ingredients for Cake Layer

  • 1 and 1/3 cups of All-purpose Flour (Maida)
  • 1 tsp of Baking Powder
  • ½ tsp of Fine Salt
  • 1 cup of powdered Sugar
  • ½ cup of Vegetable Oil
  • 2 large Eggs
  • ½ cup of Milk
  • ¼ cup multicolored sprinkles and more for sprinkling

Required ingredients for Frosting

  • 1 ounce Cream Cheese
  • 1 tbsp of powdered Sugar
  • ½ cup of Heavy Cream
  • ¼ tsp of pure Vanilla Extract

Instructions

  • Place an oven rack in the center of the oven and preheat to 350 degree F.
  • Cover the bottom of a 9-inch round cake pan with a parchment paper.
  • Now, grease the paper and the sides of the pan with the butter.
  • To prepare the cookie layer, add flour, baking soda and salt in a large bowl. Whisk together and keep aside.
  • Take another bowl and add the butter and both the sugars in it. Beat them with an electric mixer on medium-high speed, till light and fluffy, around 4 minutes.
  • Add the egg and beat it with the same. After beating the egg into the mixture, beat the vanilla extract.
  • Scrape down the bowl as needed. Reduce the speed to medium of the electric mixture and add the flour mixture, beat, until just properly blended.
  • Add the chocolate chips in the mixture and stir them properly.
  • After doing this long procedure, press the cookie dough into an even layer in the preheat cake pan and bake, till it turns to golden brown and a knife inserted in the center comes out clean.
  • Take it out from the oven and let the layer for about 10 minutes.
  • Now, for the cake layer, mix together the flour, baking powder and salt in a medium sized bowl and set aside for minutes.
  • Again beat the powdered sugar and oil by using an electric mixer on medium-high speed in a large bowl for about 5 minutes until the mixture turns light in color and fluffy.
  • After doing this, beat the egg in the mixture.
  • Now, beat the vanilla extract in the same.
  • Add flour mixture and the milk into the batter with a spatula, adding the flour in three additions and the milk in two, starting and ending with the flour, until just smooth.
  • Add the sprinkles and stir well.
  • Now, pour the cake batter over the cookie layer and bake until the middle layer of the cake jumps back when pressed and a knife inserted in the center comes out clean. It will take around 1 hour.
  • Run the knife around the corners of the cake and let cool completely.
  • Transfer the cake to a serving plate, having the cookie layer on the bottom.
  • To prepare frosting, beat the cream cheese and granulated sugar with an electric mixer on a medium-high speed in a large bowl, till smooth and all the sugar has dissolved.
  • Add the cream and vanilla, continue to beat.
  • Frost the cake and decorate it with more sprinkles.
  • Chocolate Chip Cookie Layered Cake is ready to serve.
