Have you heard the name of “fritters” before? Many of you not only heard, but also savour this type of dish and those, who haven’t, today we are sharing the recipe of spicy corn fritters, which is a regular snack during monsoons. The Fritter is a wide variety of fried foods, consisting of a portion of batter or breading that has been filled with fruits, meat, seafood and other ingredients. Spicy corn fritters are crispy, salty and crunchy and also a sight to behold and a treat to bite into!!

It makes a delicious snack and also a vegan and gluten free so those, who are very health conscious can enjoy during their breakfast time. One bite of freshly made fritters prepared with fresh corn dipped in a sweet chili sauce, nothing else seems even remotely appealing. Therefore, if you ask me for the evening snack, I would just say, “spicy corn fritters”. Below is the recipe of it, get ready to learn and then for cooking it at home.

Let’s start with the recipe of Spicy Corn Fritters:

Serves: 16 servings

Required Ingredients for dipping sauce

  • ¾ cup of Rice Vinegar
  • ½ cup of Sugar
  • 1 and ½ tsp Red Chili Pepper Flakes
  • 1 and ½ tsp of Salt
  • 1 large clove garlic (chopped)

Required Ingredients for Fritters

  • 1 cup of Wheat Flour
  • ¼ tsp of Baking Powder
  • ½ tsp of Salt
  • 1 tsp of Coriander Powder
  • ½ tsp of Cumin Powder
  • 1 Egg (slightly beaten)
  • 1 tsp of Lemon Juice
  • ½ cup of Water
  • 2 cups of Corn
  • 4 Large Green Onions (finely chopped)
  • ¼ cup Coriander Leaves (finely chopped)
  • Peanut Oil for frying

Instructions

  • For preparing the sauce, combine all the sauce ingredients into a small saucepan.
  • Cook over the medium flame and stir it with a wooden ladle, till the sugar completely dissolves.
  • Now, increase the flame to the medium high and let boil for the 5 to 10 minutes or until the mixture becomes a bit syrupy.
  • Now, remove the saucepan from the gas stove and keep it aside for the cooling.
  • If it’s looking a little thick, then you can add a little water to it.
  • Take a medium-sized bowl and sieve the flour, baking powder, salt, coriander and cumin powder together in it.
  • Add lemon juice, egg and water. Stir frequently with the help of a wooden spoon, until smooth.
  • Add the onions, corn and coriander leaves. Again stir for just combined all the ingredients together.
  • Heat the oil in a large frying pan or a wok (kadai) on a medium high heat.
  • Now, put 2 full tablespoons of fritter batter into the pan or a wok and press them a bit with the back side of the spoon as soon as it is in the pan or a wok.
  • Put 3-4 fritters at a time and leave about ½ inch between one another.
  • When they are nicely browned from one side, flip them to cook from the other side.
  • After that, transfer to a plate having tissue to absorb the excess of oil.
  • Fritters are ready, serve them immediately with the sweet chili dipping sauce.
