We are well acquainted with the pudding, a cooked sweet dish served after the meal or as a side dish. This sweet dessert enriches your dining experience and compels you to take a taste of it after each bite of your food. Now, there are a number of varieties having different ingredients and flavour in each. Mostly, it’s prepared on special occasions, but you can also cook it on other days to bring a change in your routine meal. As, it’s already mentioned that there are different types and here, we are bringing one of them named as “Coconut Rice Pudding”.

The warm and creamy coconut rice pudding prepares with the flecks of coconut, aromatic spices of cardamom, cinnamon and a crunchy topping of pistachio, this sweet pudding comes together in just 20 minutes. It’s an amazing Indian dessert that gives a beautiful charm on every face from its first sight. Serves: 3 servings

Required Ingredients

  • 1 cup of Coconut Milk
  • 1 and ½ cups of Rice (cooked and unsalted)
  • 1 and ½ cups of Skim Milk (milk from which the cream has been removed)
  • 3 to 4 tbsp Sugar
  • ½ tsp of Vanilla Extract
  • ¼ tsp of Cinnamon (grind)
  • ¼ tsp of Cardamom (grind)
  • ¼ tsp of Pistachios (crushed)
  • 3 to 4 Raisins (kish-mish)

How to prepare it


  • Heat the skim milk, coconut milk and cooked rice in large bowl and bring the mixture to boil on a medium flame.
  • When it starts to boil, add sugar and reduce the flame to low.
  • Now, simmer till the mixture gets thickens and rice absorb almost liquid for around 12 to 15 minutes.
  • Stir it occasionally to avoid sticking.
  • This pudding gets thicker as it cools down. So, switch off the flame, when there is still some liquid left, otherwise the texture of it becomes very thick when cooled.
  • Add vanilla extract, cinnamon, cardamom and raisins and stir well. Leave the pudding for cooling.
  • Now, pour it into serving dishes and garnish the pudding in each bowl with the crushed pistachios. According to your choice, you can add other ingredients for topping like almonds, cashew nut and many more.
  • If you like warm pudding, then serve immediately after a bit, otherwise placed in a refrigerator for 2 hours and serve it chilled.
