  • 1 cup of semolina (suji)
  • 1 cup of sugar
  • 4 cups of water
  • ½ cup of ghee
  • ¼ tbsp powdered green cardamom
  • ¼ tbsp raisins
  • 1 tbsp dried almonds for garnishing

Method for Semolina Porridge (Suji ka Halwa)

  • Melt the ghee in a deep, heavy wok (kadhai) and add the suji in it.
  • Stir suji over medium heat till its color change to light brown and get a glossy look.
  • At the same time in another wok (kadhai) dissolve sugar in the warm water over low heat and keep at a simmer, till required.
  • After that, add the sugar solution, cardamom and the raisins into the suji, but be careful as the mixture emits lots of steam, which can burn your hand.
  • Boil the mixture properly, then simmer till the liquid is absorbed and at this time you can stir off and on, not continuous.
  • Sprinkled the dried almonds over it for garnishing and serve it.
