Choc Raspberry Muffins

Besides, the yummy chocolate delicacy will fill up your mouth with the rich flavours of raspberries and make you say awesome in a single bite. So, let’s have a look over its recipe.

Recipe for Choc Berry Muffins:

Required Ingredients:

1. 1/2 cup gluten free rolled oats

2. 1 cup plain Greek yogurt or coconut yogurt

3. 2 eggs

4. 2 ripe chopped bananas

5. 1/3 cup buckwheat flour
6. 1/3 cup chopped dark chocolate

7. 1/3 cup blueberries or raspberries (fresh or frozen)

8. 1/4 cup cacao powder

9. 1/4 cup coconut sugar

10. 1 teaspoon vanilla extract

11. 1/2 teaspoon baking powder

12. 1/2 teaspoon baking soda.

13. Pinch of sea salt

Procedure for making the muffins

Raspberry Muffins

1. Preheat oven to 400F. Take a 12 hole muffin tin greased with coconut oil, or line the pan with paper cups.

2. In a large bowl, measure flour, sugar, cocoa, baking powder, and salt. Mix them well with a fork. In a medium-size bowl, whip egg with milk, melted butter and vanilla. Add milk mixture and stir just until combined thoroughly.

3. Add chocolate and raspberries at the end and stir the whole mixture gently.

4. Start filling the muffin cups with the batter. Bake in the center of preheated oven for 20 to 25 minutes. You can also check in between via the help of a cake tester. Insert it in the center of the muffin to see whether it comes out clean or not.

5. Before removing, cool them in a pan. Your nourishing choc berry muffins are ready to serve warm, or cool. Store them in an airtight container in the refrigerator.

Some useful tips:

1. You can make them entirely vegan by replacing the eggs with coconut yoghurt. Flax eggs can be made by putting two tablespoons of ground flax seed in a small bowl combined with 6 tablespoons of water. Before mixing it, allow to stand for a few minutes.

2. You can keep them for a couple of days if do not want to eat instantly. They can be frozen and remain fresh for many days.

3. A good lunch box meal for the kiddies. Too delicious yet very healthy.
