This authentic recipe requires knowledge of cooking with Indian spices and it gets its delicious taste from curd, besan any curry spices. Ingredients

Required Ingredients for Kadhi base

  • 3/4 cup sour Curd (Dahi)
  • 2 cups of Water
  • 2.5 tbsp of Besan (Gram Flour)
  • 1 tsp of Green Chilli-Ginger (crushed)
  • 1/2 tsp of Garlic (crushed)
  • Salt according to taste

Required ingredients for tempering

  • 1 tbsp of Oil or Ghee
  • 1/4 tsp of Cumin Seeds
  • 1/8 tsp of Fenugreek Seeds
  • 1/4 tsp of Mustard Seeds
  • 2-3 Cloves (optional)
  • 1 Cinnamon stick (broken into 2-pieces)
  • 1 Dry Red Chilli (broken into 2-pieces)
  • 7-8 Curry Leaves
  • Coriander Leaves for garnishing

Procedure

  • Beat curd and gram flour, till smooth using hand blender. But make sure that there are no lumps in the mixture.
  • Now, add 2 cups water and beat again.
  • Transfer the mixture to a medium size deep pan and bring it to boil over medium flame.
  • After that, add crushed green chilli-ginger, garlic, sugar and salt to taste. Stir to mix well and cook on low flame for approx 10 minutes or until the raw smell of gram flour goes away.
  • In between, prepare tempering by heating oil or ghee in a small tempering pan.
  • Add mustard seeds and fenugreek seeds, when they start to crackle, add cinnamon, cloves, cumin seeds, dry red chilli and curry leaves. Quick fry for around 30-40 seconds on low flame.
  • Now, take tempering pan away from flame and pour the tempering over Gujarati Kadhi. Mix well.
  • Add this tempering and let it boil for 2-3 minutes.
  • Now, turn off the flame and garnish it with finely chopped coriander leaves.
  • Gujarati Kadhi is ready to serve.
