  • 2 cups of Carrot (peeled and grated)
  • 1 + 1/2 cups of full-fat Milk
  • 1 + ½ tbsp of Ghee
  • ¼ cup of Sugar
  • 5 Cashew Nuts (chopped)
  • 5 Almond (sliced)
  • 8 Raisins (kish mish)
  • ½ tsp of Cardamom Powder (ilachi)

Procedure

  • First of all, remove the excess of water from the grated carrots by tightly squeeze the carrots with your palms.
  • Heat the ghee in a heavy based wok (Kadai) on the low flame.
  • Add grated and squeezed carrots in the wok (Kadai). Roast them on the low flame for around 3-4 minutes, while mixing continuously.
  • Now, pour the milk over roasted carrots and stir mix well. Bring it to a boil over the medium flame.
  • When it starts boiling, then reduce the flame to low and cook, until the whole milk absorbed and the mixture starts to thicken.
  • This will take around 15-20 minutes. Stir the mixture occasionally in between to prevent from sticking.
  • When the milk is absorbed completely and mixture becomes thick, then add sugar, chopped cashew nuts and raisins. Mix properly and cook it, till the sugar is dissolved.
  • After that, add cardamom powder, mix properly and switch off the flame.
  • Finally, transfer it into a serving bowl and garnish with sliced almonds.=
  • Gajar ka Halwa is ready, serve it hot.
