Simone Arora’s Mutton Dhanshak and Brown Rice

Ingredients for the Dhanshak Masala

  • 100 gm dry Coriander Seeds
  • 50 gm Fenugreek (methi dana)
  • 50 gm Mustard Seeds (rai)
  • 50 gm Cumin seeds (jeera)
  • 50 Bay Leaves (tej patta)
  • 100 gm Mixed Cardamom, Cloves and Cinnamon
  • ½ cup of fresh Coriander Leaves (chopped)

Ingredients for the Mutton Dhanshak

  • 1 kg Mutton
  • 3 Onions (finely chopped)
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds (jeera)
  • 1 tsp Ginger-Garlic paste
  • 2 Tomatoes
  • 100 gm Tuwar Dal
  • 100 gm Masoor Dal
  • 2 tbsp of Yellow Moon Dal
  • 3 tbsp of Dhanshak Masala

Procedure to prepare Dhanshak Masala

  • Fry dry coriander seeds, fenugreek, mustard seeds, bay leaves, cardamom, cloves and cinnamon for a few minutes on a hot tawa.
  • After that, let the mixture cool and grind them to create a fine powder.

Procedure to prepare Mutton Dhanshak

  • Heat the oil in a wok (kadai).
  • Add chopped onions along with cumin seeds and fry, until light brown.
  • Add ginger-garlic paste and 3 tbsp of the Dhanshak Masala with turmeric powder, chili powder, tomatoes and keep frying, till all the tomatoes get dissolved and properly mashed with the onions.
  • Now, keep the wok (kadai) aside. In a separate pressure cooker, add the rinsed Mutton pieces in 1 litre of water along with the tuwar dal, masoor dal and yellow moong dal.
  • Add salt and wait for two whistles till the mutton pieces and the dal are cooked.
  • Now, pour the mutton and dal mixture into the masala and mix together.
  • Add some tamarind (imli) water or squeezed some lime juice. Add chopped coriander leaves and cook for around 10 to 15 minutes before serving it.
