And, is there anything better in the morning? than waking up to the smell of freshly made pancake? You can enjoy this day with your friends and family members by preparing it with your own hands. The crispy and crunchy taste of it, enhance the flavour of your taste buds.

To celebrate this day, we are sharing the recipe of Blueberry Orange Spice Pancake in this post. We don’t think there is, so we thought that Blueberry Pancake Day is a good excuse to share this mouth-watering recipe. Blueberry Orange Spice Pancakes recipe for Blueberry Pancake Day:

Required Ingredients

  • 1-1/2 cups of Blueberries (fresh or frozen)
  • 2 cups of All-purpose flour (Maida)
  • 3 tsp of Baking Powder
  • 1 tsp of Cinnamon (Dal Cheeni)
  • 1/2 tsp of Nutmeg (Jaiphal)
  • 1/4 tsp of ground Ginger
  • 1/8 tsp of ground Clove
  • 1/2 tsp of Salt
  • 2 large Eggs
  • 3/4 cup of Milk
  • 3 tbsp of Unsalted Butter (melted and cooled)
  • 3 tbsp of Maple syrup
  • 1 tbsp of Orange zest (finely grated)
  • 1/4 cup of Orange Juice (freshly squeezed)
  • 1 tsp of Vanilla extract
  • Vegetable Oil

Procedure

  • Mix 1 tsp of flour with the blueberries and keep aside.
  • Add the remaining flour, baking powder, spices and salt in a bowl and mix properly. Set aside.
  • Take another bowl, beat the eggs, milk, butter, maple syrup, orange zest, juice and vanilla.
  • Stir the egg mixture into the flour mixture. Fold in the blueberries.
  • Add a 1/4 cup of batter into the heated pan, cook till golden on each side and serve immediately with fresh blueberries and maple syrup.
