But, as we have already mentioned about a twist in your meal, you must have guessed that it’s not going to be simple, rather it will be quite different from usual one. The normal Dosa is prepared with rice and dal flour, while this one consists of chickpea flour with smashed sweet potatoes that you have never heard before. Step by step recipe of unique Indian Dosa:

Required Ingredients for the stuffing

  • 2 Baking Potatoes (scrubbed)
  • 2 Sweet Potatoes (scrubbed)
  • Olive oil
  • Salt according to your taste
  • 1/2 tsp of Pepper
  • 1 dried Red Chilli (finely sliced)
  • 1 fresh Red Chilli (finely sliced)
  • 1 cm piece fresh ginger (peeled and finely sliced)
  • 1 and ½ tsp of Mustard seeds
  • 1 tsp Turmeric Powder
  • 1 Lime (halved)
  • 4 Spring Onions (trimmed and finely sliced)
  • A few leaves of Coriander (roughly chopped)

Required ingredients for the Dosa batter

  • 1 cup Chickpea Flour (chole)
  • 1 cup of Wheat Flour
  • ½ tsp of Soda
  • A pinch of Salt
  • 2 and ½ tsp of Mustard Seeds
  • Olive Oil

Method

Procedure

  • Prick (make small holes) the potatoes and sweet potatoes all over with a knife or a fork and bake them in the oven for around 1 hour, till soft.
  • Take out from the oven and peel them.
  • Now, roughly mash them and set aside for a minute.
  • Heat the olive oil in the pan or a Wok (kadai) on a medium flame.
  • When the oil becomes hot, add the chillies, ginger, mustard seeds, turmeric powder, a pinch of salt and pepper.
  • Cook and stir the mixture frequently, until it smells fantastic and the seeds start to pop.
  • Now, pour the mixture over the mashed mixture of potatoes and sweet potatoes, then carefully mix together with a ladle.
  • Add lime juice, spring onions and coriander leaves. Mix everything properly and set aside.
  • To prepare Dosa batter, first add both the flours to a bowl along with soda, mustard seeds and a pinch of salt.
  • Add about 400ml water into the bowl to make a loose batter.
  • Add the few drops of oil over the non-stick pan or a griddle over a medium-high flame and spread it around with the kitchen paper. You can also use the piece of onion in place of kitchen paper.
  • Now, add a spoonful of batter to the pan or a griddle and spread the batter by a small bowl, until it flattens properly.
  • Heat it, till golden brown and a lot of bubbles appeared on the top of it.
  • Now, place 1-2 tsp of the stuffing in the center of the batter and once the base becomes crispy, then loosely and gently roll up the Dosa in the pan and it’s almost ready to serve.
  • Transfer it into serving the dish and immediately serve with minted yoghurt, chutneys and ketchup.
