Now, once the Diwali Festivities get over, comes the festival of Bhai-Dhooj, a festival, which celebrates the bond between brothers and sisters. Just like Raksha Bandhan, this fest is all about pampering brothers with gala feast and beautiful gifts. So, to bring a big smile on your brother’s face, today we have one royal and special Bengali dessert for all the sisters that surely wins your brother’s heart.

As we have mentioned Bengali dessert, you all understand that we are talking about the lip-smacking Rasmalai that offers amazing taste and flavor. Generally, you purchased this sweet dish from outside stores, but this time, you have to prepare at home by yourself so that, your bro feels very special on his day. Below is the following recipe of Rasmalai, therefore, roll your eyes over it and get started with the recipe.

Prepare Rasmalai on this Bhai Dhooj and satisfy your brother’s sweet cravings:

Required ingredients for Malai Pattie (Chhena Pattie)

  • 1 liter Milk
  • 2 tbsp of Lemon Juice
  • 1 and ½ cups of Sugar
  • 4 cups of Water

Required Ingredients for Rabri

  • 1 liter Milk
  • 3 tbsp of Sugar
  • 1 tsp of Corn Flour (optional)
  • 10-12 strands of Saffron (Kesar)
  • ¼ tsp of Green Cardamom Powder
  • 2-3 tbsp of Pistachio (chopped)

How to prepare Rasmalai

  • First of all, prepare fresh Paneer using 1-liter milk and 2 tbsp lemon juice.
  • Take a clean muslin cloth and tie Chenna tightly in it.
  • Squeeze it gently to drain out the excess of water and hang it over the hook for around 30 to 45 minutes.
  • After that, open the muslin cloth and transfer Chenna to a plate.
  • Crumble or mash the Chenna with hand. It should be crumbly, yet little moist.
  • Knead the crumbled Cheena by hand, until it comes together and turns into dough.
  • Now, divide the kneaded dough into 12 equal portions and make a small sized ball of each portion.
  • Slightly press it between your palms to flatten it and turn into round Pattie.
  • Now, to prepare sugar syrup, add sugar in the 4 cups of water. Start to heat over the medium flame.
  • Stir the water with a spatula to dissolve the sugar completely.
  • When the sugar syrup starts to boil, carefully drop all the patties into it.
  • Cover the bowl with a lid and boil for around 5 minutes on the medium flame.
  • Now, open the lid and turn each pattie carefully with the help of a spatula.
  • Then, again cover the lid and cook for next 7-8 minutes.
  • Switch off the flame and remove the lid. Transfer all the patties to a large bowl and let them cool at room temperature.
  • Now, press each Pattie gently between two spoons to remove the excess of sugar syrup.
  • To prepare Rabri, pour 1-liter milk in a heavy based pan and heat it over the medium flame.
  • When it comes to a boil, reduce flame to low and add saffron strands.
  • Stir the milk at regular intervals in between to prevent sticking and cook, till its quantity reduces to half.
  • Mix 1 tsp of corn flour with 1 tbsp water and make sure that it doesn’t have any lumps.
  • Now add sugar, corn flour-water mixture, and cardamom powder.
  • Stir the complete mixture continuously and cook for around 3-4 minutes, until sugar dissolves.
  • Now, add patties and chopped pistachio.
  • Again cook for 4-5 minutes. Switch off the flame and transfer it to serving bowl.
  • Cool it to a room temperature and then place it in the refrigerator for at least 2-3 hours.
  • Serve chilled Rasmalai as a dessert.
