Step by Step instructions to prepare Kaju Katli at home:

Serves: 4 servings

Required Ingredients

  • 1 cup of Cashew Nuts (Kaju)
  • ½ cup of Sugar
  • ¼ tsp of Cardamom Powder (ilachi)
  • ¼ cup of water
  • Ghee for greasing

Method

  • Put the cashew nuts to a mixer grinder and grind them, until smooth powder. Note that, do not grind them too much otherwise it will start to release oil and makes the powder sticky.
  • Now, to prepare sugar syrup, boil sugar and water over the medium flame in a pan or a wok and stir continuously.
  • When the sugar syrup is prepared, reduce heat to low and add cashew nut powder and cardamom powder.
  • Stir with spatula and mix properly.
  • Cook and mix continuously, till the mixture gets thickens and turns into a big single lump. It will take around 5-6 minutes to reach this stage.
  • Switch off the flame and cool it for 3-4 minutes.
  • Take a big plate and grease the back sides of the plate with the ghee.
  • Now, transfer the lump on a plate and grease your palms with ghee. Knead the mixture for a few minutes, until it has a smooth surface.
  • In a case, if the mixture become dry, add a few drops of milk and knead it to make smooth.
  • After that, roll out with the help of a rolling pin.
  • And, by using a knife, cut into in the diamond shapes.
  • Let them cool for 3-4 minutes and separate all the pieces.
  • Kaju Katlis are ready, serve it and enjoy.
