The Easy Potato Soup Recipe

Required Ingredients:

Potato Soup Ingredients

1. 5 bacon slices, chopped

2. 1-2 chopped onions

3. 3 tablespoon butter or bacon grease

4. 2 cups of chicken stock

5. 2 cups warmed milk

6. 1/4 cup of all purpose flour

7. 2-3 good sized potatoes, peeled and chopped off

8. 1 cup finely chopped cheddar cheese

9. 1/2 cup plain greek yogurt or sour cream

10. Salt as per taste

11. 1/2 teaspoon crushed black pepper

12. toppings (optional)- extra cheese, extra bacon, sour cream and thinly sliced green onions or chives (Hara Pyaaz)

Directions for use:

1. Over a medium-high flame, heat a large size stockpot. Put diced slices of bacon in it and cook them until they become crunchy. Stir in between. After they get cooked perfectly, transfer them to a plate by the help of a slotted spoon. Keep three tablespoon of butter or bacon grease in the stockpot itself.

2. In the reserved grease, add chopped onions and potatoes and stir them properly. Make sure they become soft.

3. Add flour on top of the onions and mix them well. Check in between whether the flour is perfectly cooked or not. Saute for a while to cook it.

4. Add milk and cooked bacon to the mixture and stir the whole stuff until combined. Make sure the mixture doesn’t reach the boiling point. Cook until it reaches a simmer.

5. Reduce the level of flame to medium-low, cover the stockpot and let it heat for 10-15 minutes. Do check whether the potatoes are soft or not, stir in between. (the finer you cut the potatoes, the faster they’ll cook)

6. When potatoes become properly soft, add the cheddar cheese and greek yogurt, salt, and pepper. Check as per your need and add more of them accordingly.

Your delicious Potato Soup is ready to serve. Garnish with extra toppings and relish the taste.
