Ingredients for making a Dal-Baati-Churma

For the 10 baatis

  • 2 whole cup of wheat flour (gehun ka atta)
  • 1 tsp carom seeds (ajwain)
  • ¼ baking soda
  • 1 cup pure ghee

For the dal

  • ¼ cup dhuli moong dal
  • 1 cup dhuli urad dal
  • ¼ cup chana dal
  • 1 tsp red chili powder
  • A few small pieces of ginger
  • ½ tsp turmeric powder
  • 1 tsp cumin seeds
  • Very few amount of asafoetida
  • 2 dry red chillies
  • 3 cloves
  • 2 green cardomoms
  • 1 inch stick of cinnamon
  • 2 bay leaves
  • 5-6 curry leaves
  • 2 medium size tomatoes
  • 3 chopped green chillies
  • Salt according to your taste
  • 4 tbsp oil
  • ¼ cup fresh corriander leaves
  • 1 medium size lemon

For the churma

  • 2 cups of wheat flour
  • ½ cup pure ghee
  • 4 tbsp suji
  • ¾ cup powdered sugar
  • ¼ tbsp green cardamom powder
  • 10 chopped cashewnuts
  • 10 chopped almonds
  • 10 raisins
  • Milk as required

Procedure

How to make dal?

  • Immerse Urad dal, Moong dal, and Chana dal in 3 cups of water for about an hour.
  • Boil the dal with turmeric powder and salt and after that mash them properly with the round ladle.
  • Heat oil in a wok (kadhai) and add cumin seeds, asafoetida, dry red chilies, bay leaves, cloves, cinnamon, cardamoms, curry leaves, ginger, green chilies, tomatoes and red chili powder. Fry them quickly.
  • Now, add this cooked dal to this mixture and blend properly.
  • Squeeze a lemon and chopped coriander leaves over it.

How to make Baati?

  • For preparing Baatis, take a wheat flour in a dough kneading plate. Add salt, baking powder and half a cup of pure ghee.
  • Mix well all these ingredients into the flour and add a sufficient amount of water to knead into a solid dough.
  • Preheat oven to 180°C and form a round shape balls of the medium size of the solid dough .
  • Grease the baking tray with oil and place Baati over it.
  • Place the tray in preheated oven and bake them all. It may take 15-20 min.
  • When done, dip the Baati into a bowl of pure ghee.

How to make churma?

  • Mix wheat flour and suji in a dough kneading plate (paraat) and add ½ cup of ghee into it and mix well.
  • Add milk as required and kneed into a solid dough and shape it with small size balls.
  • In a wok (kadhai), heat ghee and deep fry the balls.
  • Drain and place on a paper and cool it.
  • Now, grind the balls into a fine mixture.
  • Sprinkle powdered sugar, cardamom powder, cashew nuts, almonds and raisins over the mixture and blend it well.
  • Serve it with ghee.
