Step-by-step guide on how to cook crispy Uttapam:

Ingredient used

  • 1 cup of semolina (suji)
  • 1/4 cup of a bit sour curd (dahi)
  • 1/4 cup of capsicum (finely chopped)
  • 1 large tomato (finely chopped)
  • 2 green chilies (finely chopped)
  • 1 tsp grated ginger
  • 1/4 cup of coriander leaves (finely chopped)
  • 2 tsp oil
  • Salt according to taste

Instructions to prepare it

  • In a bowl, put semolina (suji), sour curd (dahi), and salt into it.
  • Mix properly by adding water slowly until the batter becomes thick. After that, keep it aside for 20 minutes.
  • Now, add finely chopped capsicum, onion, tomato, coriander leaves, and grated ginger into the batter and sprinkle 1 tsp oil over it.
  • Again mix it properly and check the consistency of the batter.
  • Heat non-stick griddle (tava) at medium flame and add a few drops of oil over it.
  • Spread the oil using half onion.
  • Now, pour the batter over medium hot griddle (tava) with a ladle and spread it into the circle with the help of a ladle or you can use round small bowl.
  • Drop 1 tsp oil around the edge of it and heat till the top surface changes from white to off-white.
  • Gradually bottom side becomes light brown and, now over turn it gently and cook other side.
  • Uttapam is ready. Served it with tomato ketchup or tomato chutney.
